It just doesn’t seem like a proper Victoria Day weekend without a little bit of sparkle and boom!  Catching a fireworks display is a fun way to spend an evening on during the long May weekend.  If you’re looking for Fireworks to enjoy on this long May weekend we’ve found a few in the Mississauga area for you!

The Canada’s Wonderland fireworks show is designed by FX WORXS, one of Canada’s leading creators of pyrotechnics, fireworks and special events, with experience in feature films (Death Race 3000), major concert tours (Genesis Canadian Tour 2007) and other special events.  This year’s show features 4000 explosions and custom fireworks designed just for Wonderland. Mississauga Victoria Day Weekend 2011Finding things to do in and around Mississauga on this Victoria Day weekend has been a bit of a challenge!  We considered the weather forecast as well… which unfortunately is wet… and have come up with this list.

On Saturday or Sunday you could take some time inside out of the rain enjoying the beauty of the Art Gallery Of Ontario.  The AGO currently has a special exhibit on featuring the work of two remarkable story tellers – Aesop and Walter Trier. Most people are familiar with the fables of Aesop that taught us simple true lessons for success in life as children. But you may be less familiar with Walter Trier. Walter Trier was an avid collector of traditional German folk toys. It has come to our attention that today is “National Chocolate Chip Day”.  We’re not sure if that’s an official Canadian holiday or not.  Actually, to be frank, we don’t really care.  As a general rule Mississauga Kids likes to celebrate ANY holiday that has to do with chocolate.

My mother use to make a pretty good chocolate cookie.  She used the recipe off the back of the Nestle Chocolate Chip Bag, but substituted Crisco for butter.  Later I found Hillary Clinton’s Recipe for Chocolate Chip cookies, which I liked better.  This is not a reflection of my mother’s baking skills or any particular political leaning… I just liked the addition of oatmeal I think.

So today I will post both recipes for you to enjoy!  Please do post any of your chocolate chip recipes below!   ~ Anne

Original Nestle® Toll House® Chocolate Chip Cookies

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter or margarine, softened (Anne’s Mom used Crisco)
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 12 ounce package of  Nestle® Toll House® semi-sweet Chocolate Chip Morsels
  • 1 cup chopped nuts

Directions:

1. PREHEAT oven to 375 degrees F.

2. COMBINE flour, baking soda, and salt in small bowl. Beat butter, granulared sugar. brown sugar, and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

2. BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Hillary Clinton’s Chocolate Chip Cookies

  • 1 1/2 cup unsifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup solid vegetable shortening
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups old-fashioned rolled oats
  • 1 (12 ounce) package semi-sweet chocolate chips

Preheat oven to 350 degrees F. Grease baking sheets. Combine flour, salt, and baking soda. Beat together shortening, sugars, and vanilla in a large bowl until creamy. Add eggs, beating until light and fluffy. Gradually beat in flour mixture and rolled oats. Stir in chocolate chips. Drop batter by well-rounded teaspoons on to a greased baking sheets. Bake 8 to 10 minutes or until golden. Cool cookies on sheets on wire rack for 2 minutes. Remove cookies to wire rack to cool completely

We know that with all the hectic week we all have finding the time for family fun can be difficult so we have made it easy & taken all the work out for you.

We will feature fun things to do with your Mississauga Kids in and around our city that in most cases won’t break the bank and will help you discover more of what’s out there to do and explore.

I know the weather forecast calls for a rainy weekend see here for more details  but there is so much going on that it is worth a trip out just grab some rain gear and go!

Mississauga Marathon

Its not just for serious runners. In addition to Full & Half Marathons the race also features shorter races, a Family Walk/Run and other Kid Friendly options.

If you don’t have time to train for this year’s race there will be lots of fun happening at the Finish Line for both Mississauga Kids & their parents.  There will be face painting, Balloon Animals, vendors & other entertainment on Sunday May 15th from 10am-2pm.  For more details check out Mississauga Marathon Entertainment and see the complete calendar of events.

Sherway Gardens LEGO Store Grand Opening Weekend

If staying indoors is more your style, then get over to Sherway Gardens and helps a real LEGO Master Builder construct an 8-Foot tall Lego R2-D2 during the store’s grand opening celebration.  Not only can your kids help create this LEGO masterpiece but they can win great prizes and participating kids will receive a free LEGO Star Wars certificate of achievement (while supplies last)

Leslie Log House Grand Opening – Saturday May 14th

Free Family Fun! You are invited to the Official Opening of Leslie Log House from 1 – 4 p.m. on Saturday, May 14. Come be a part of history when the heritage site is officially opened to the public. 4415 Mississauga Road, South of Eglinton.  Take a step back in time and get a guided tour, see exhibits from the Streetsville Historical Society, do some fun kids crafts all with free refreshments!

The kids will love these... if there are any left!

I found this recipe years ago in a Martha Stewart Magazine.  One of the things I love about this recipe is that you have to chill the dough. So when I make this recipe I do not cook them all at once.  I cook a batch and then the next day… just before the rest of the family arrives home for the day, I cook some more!  What Mississauga Kid doesn’t love coming home to the smell of warm chocolate cookies?  Using this method will earn you a Super Mom designation for at least 24 hours… or until you have to make them do their least favorite chore, whichever comes first!

Grammy’s Chocolate Cookies

(Anne Feldman’s grand prize winning recipe in a Martha Stewart Cookie of the Week Contest was a gift to her from her grand mother Ivyle Phinney Morrow.)

Makes about 100

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup Dutch cocoa power
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/4 cups unsalted butter, room temperature (2 Sticks plus 4 Tablespoons)
  • 2 cups sugar, plus more for dipping
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

Directions:

1. Preheat oven to 350 degrees.

2. Sift together flour, cocoa powder, baking soda and salt in a medium bowl. Set aside

3. In a the large bowl of an electric mixer fitted with the paddle attachment, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy, about 2 minutes.  Add vanilla, and mix to combine.  Gradually add dry ingredients, and combine with mixer on low speed.  Cover bowl with plastic wrap and chill until dough is firm, about one hour.

4. Line baking sheets with Silpat* baking mats. Roll dough into 1 inch balls. Dip top of each ball into sugar. Place on prepared baking sheets about 1 and 1/2 inches apart. Bake until set, about 8 minutes.  Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

*I use Tefbake Baking Sheets instead of the Silpat.

One of the most important activities for a family to enjoy is sharing a meal together.  It provides us with an opportunity to gather together and share our thoughts and ideas as well as our triumphs or challenges of the day.  I’m sure we have all read the research that shows that families that eat together enjoy many benefits.

Some of those benefits include:

  • better nutrition
  • more proficient language skills
  • kids who are less likely to use drugs

Recently I posted about my father’s fabulous rum cake recipe. (See: Jack Ryan’s Famous Rum Cake!) Posting that got me to wondering about what recipes other families in Mississauga cherish.  We live in a marvelous multi-cultural city and that would lead me to believe that there certainly must be some wonderful recipes out there!

Every family has their traditions for the holidays.  One of my favorites is cajoling my father into making his famous rum cake.   He started making this over 25 years ago and it is always a family favorite.  When he visits he brings his favorite pots and pans with him to make this.  Once served be sure to get your piece quick as there are rarely any left overs.  If there are left overs don’t count on them for lunch as chances are someone snatched them for breakfast!  While the recipe calls for rum… rest assured that it is safe for kids.  All of the rum is cooked which does burn off the alcohol.  So if you’re feeling tipsy after a piece it is either your imagination or you’ve been nipping from the bottle while you cook!

The Best Rum Cake recipe in the world!

Grandpa Jack’s Famous Rum Cake

(Also Known as Bacardi Rum Cake… to give credit where credit is due.)

Ingredients

For the cake
1 cup chopped walnuts
Jell-o instant vanilla pudding – 4 serving pack
1 18.5 ounce box yellow cake mix (make sure the ingredients does not contain ‘pudding’ in it)
4 eggs
1/2 cup cold water
1/2 cup oil – vegetable or corn (Olive oil works in a pinch.)
1/2 cup dark Bacardi rum (Any amber rum will due)

For the glaze
1/2 cup butter
1 cup sugar
1/4 cup water
1/2 cup dark Bacardi rum (Any amber rum will due.)

Directions

To Prepare the Cake:

Preheat Oven to 325 degrees Fahrenheit.

Set walnut aside.

Mix all the other ingredients of the cake in mixer for couple of minutes.

Grease a bundt pan.

Spread the walnuts at the bottom of pan.

Pour the blended cake mixture over this.

Put cake in oven preheated to  325 degrees Fahrenheit.

Bake the cake for 1 hour.

Just before cake is ready take prepare the glaze.

To Prepare the Glaze:

Take a pan and place on medium heat. Put in and melt the butter.

Put in the water and sugar.

Allow to boil till sugar melts.

Turn off the heat and stir in the rum.

The rum can release very hot vapor. Please be careful.

Once cake is ready, pierce the entire cake using a fork. Please do this gently. We do not want to shred the cake to pieces.

Keep the cake on a big plate and slowly drizzle the warm glaze slowly over it, allowing it to seep into the cake.

Let the cake stand for at least a couple of hours.

There is another article about the new Oakwood Academy in Port Credit.  Oakwood Academy is a division of Kids CAN Social Centre and developed to serve the growing need for individualized education in a school setting. They are an Independent School, registered with the Ontario Ministry of Education. Their uniquely designed curriculum has been developed for children who require explicit education and focuses on both academic and social skills.

I was recently invited to attend an event put on by Maple Leaf Foods for bloggers.  Unfortunately for me it coincided with a week away from home, with out kids, with my husband.  Since I wanted to enjoy my time alone with my wonderful husband, I called Chantel Kowdrysh to see if she could fill in.  I figured she’s busy mother of six, surely she would like to know more about food safety… and I bet she’s enjoy a night out too.  I was right!  Thank you to Chantel for pinch hitting… or writing… for me!

There was some rumbling of thunder, and flashes of lightening, but nothing was keeping me away from my destination on Thursday May 27.  No sir, I had been handed the best gift of all by Mississauga Kids very own Anne Green.  A night away from home, and the opportunity to eat a wonderful dinner – without six screaming children!

Maple Leaf Foods paired together with a Toronto based word of mouth marketing company Matchstick, who are a member of WOMMA (Word of Mouth Marketing Association) to put together the Maple Leaf Roundtable Blogger event.  The event was held in Mississauga at Maple Leaf Foods ThinkFOOD! Centre. It was a lovely event that offered the opportunity to meet a group of wonderful bloggers from all over the greater Toronto area including, Kingston, Kitchener, and London.  As well, it was great to finally be able to meet my email buddy Sumaya Khan from Matchstick, who was a key person in orchestrating the event.

Upon arriving I immediately felt at ease as I began to mingle with so many great bloggers, writers, and authors, even though many of them I had never met. The evening started out in the front lobby with some very tasty appetizers including Maple Leafs Natural Selection Turkey and Ham.  Yummy!  Something a busy mom like me would definitely put in my children’s school lunches!

Following the front lobby mingling, we all gathered into a beautifully set room with a dining area giving us all full view of the kitchen and the Chef who was hard at work.

Since the 2008 Listeria outbreak and recall, Maple Leaf has been attempting to restore their reputation by setting new standards in food safety and nutrition, and clearly the Round Table Blogger event was a marketing ploy to reach out to us, the costumer, parent, and blogger to assist in their endeavour to get their message across about their renewed commitment to food safety and the introduction of their Maple Leaf Food Safety Pledge.  However, it was quite obvious that Maple Leaf Foods are taking things very seriously as there were numerous key Senior Management people present, including President and Chief Executive Officer Michael McCain who opened up with the following statement:

“2008 was one of the most challenging years for me both personally and in business. On our watch 22 people died.”

He certainly took full accountability and owed up to the fact that Maple Leaf was at fault, yet they learned some very valuable lessons from the tragic event and are taking those lessons and applying it on a daily basis. He talked about Root Cause Analysis, Investment in the people and Maple Leaf Food’s commitment to becoming a global leader in food safety.

In January of 2010 Sharon Beals was hired as Senior Vice President, Food Safety and Quality Assurance, and Dr. Huffman was brought on board as Chief Food Safety Officer. Their roles are to ensure that Maple Leaf is not only meeting strenuous food and safety standards but that they are also reaching heights that go above and beyond.  Part of the process involves daily listeria testing and what’s known as the 8:30am call, where the results of the testing are thoroughly reviewed and discussed.  Improved strategies through replacing $20 million in infrastructure, intensive cleaning practices, piloting new food safety programs, continually making improvements to their HACCP  (hazard Analysis and critical control points) program, and working towards their goals of becoming GFSI (global food safety initiative) and BRC (British Retail Consortium) certified are just a few of the first steps that they have begun.

Another discussion point was the fact that there are always new and better technologies for testing, but that listeria is everywhere – even our kitchen’s, however, it is up to us to ensure that it doesn’t have the opportunity to spread leading to infections and illness.  See the attached kitchen checklist and helpful tips provided by Maple Leaf at the bottom of this post.

At the end of the session I was left with the belief that Maple Leaf Foods are sincere in their efforts and that they have been able to make considerable strides since the tragic events in the summer of 2008. Do they still have some ways to go? Of course they do, but really what company doesn’t?  As a mother of six children do I have faith in the safety of Maple Leaf Food products?  Absolutely.

As Michael McCain stated several times throughout the evening “we are not perfect.” True enough, nothing can be a 100% perfect, but it is comforting to know that the 24,000 workers at Maple Leaf Foods are certainly trying to be.

Food safety tips to keep top of mind:

1. Keep hand washing soap in the kitchen so it is easily accessible and wash your hands with soapy warm water for at least 20 seconds prior to starting meal preparation and during any new stage from preparation to meal time.

2. Keep a clean kitchen. Keeping your kitchen clean and tidy can reduce the chance of bacteria build-up.

3. Keep raw foods separated from cooked and ready-to-eat foods to avoid cross-contamination.

4. Carefully monitor and check best-before dates and package integrity of perishable products. Do not keep products beyond expiration date printed on the packaging.

5. Keep separate cutting boards, utensils and platters for raw meat, poultry and seafood and for ready-to-eat/cooked foods.

6. Keep cold foods cold (4°C or below).

7. Keep hot foods hot (60°C or above).

8. Keep a working meat thermometer on hand to check the internal temperatures of cooked foods. Always cook meat to the safe internal temperatures.
