Blogging for Mississauga Kids…

and the People Who Love Them!

One of the most important activities for a family to enjoy is sharing a meal together.  It provides us with an opportunity to gather together and share our thoughts and ideas as well as our triumphs or challenges of the day.  I’m sure we have all read the research that shows that families that eat together enjoy many benefits.

Some of those benefits include:

  • better nutrition
  • more proficient language skills
  • kids who are less likely to use drugs

Recently I posted about my father’s fabulous rum cake recipe. (See: Jack Ryan’s Famous Rum Cake!) Posting that got me to wondering about what recipes other families in Mississauga cherish.  We live in a marvelous multi-cultural city and that would lead me to believe that there certainly must be some wonderful recipes out there!

So… in honour of family day I’m asking you to tell us about one of your favorite family recipes.  You can just write a paragraph anout the recipe or post the whole recipe for others to enjoy.

    One of our favorites is White Chicken Chili (this is a spin off Pampered Chefs version) use the following ingredients….

    3 whole heads garlic
    3/4 tsp salt, divided
    3 tbsp olive oil, divided
    2 poblano peppers
    1 medium onion
    1 1/2 lb boneless, skinless chicken
    2 cans white kidney beans (drained)
    1 jar (16 oz) salsa

    Directions:
    1.  Cook the chicken in a frying pan
    2. Place all remaining ingredients in slow cooker and let cook for about 4-6 hours.

    This recipe will serve about 8 people.

  3. I’m not a baker, but I don’t mind baking items that come in box mixes & putting my own spin on them (the easier the better!)

    A fave among my family & friends is when I make JELLO CAKE! It is incredibly easy! I usually bake the cake the night before, to give it lots of time to cool & stick it in the fridge just before bed (it will need to stay in the pan, so I often bake it in a Dollar Store aluminum foil cake pan)

    You will need

    A white or vanilla cake mix & ingredients required for that mix (doesn’t matter what brand, as I usually use the NO NAME box cake mix)

    Jello (any flavour you love!)

    Cool Whip (or No Name dessert topping-I’ve even used the LIGHT Cool Whip & it works)

    Bake the cake as normal. Let cool (as I said above I usually make the cake the day before) & then refridgerate.

    Once the cake has cooled take a fork & make lots of piercings all over the cake (the more holes the better!) Remember the cake has to stay in the pan!

    Make the JELLO as directed, BUT instead of refridgerating it, pour it all over the cake. The Jello will colour the cake & get into all the fork piercings you’ve made.

    Next cover the whole top of the cake with LOTS of Cool Whip

    Put the cake back into the fridge until it is ready to be served

    When you cut the cake your guests will think you made a marble cake for them!

  4. Brandy I love to make chili! Mine rarely turns out the same way twice. I use what ever meat I have on hand. Sometimes it’s ground beef or turkey, sometimes Italian sausage. I use what ever beans I have on hand, sometimes white or read kidney beans, sometimes pintos or balck beans. Sometimes if I have 1/2 jar of unfinished salsa in the fridge I’ll toss it in.

    Years ago I had a great recipe for a vegetarian chili that featured beer and cashews! Wish I could find that.

    Lisa- The way you pierce the cake and let the jello seep into the holes reminds me of my Dad’s rum cake!

    Banada Bread (with or without chocolate chips)

    2c. all purpose flour
    1tsp baking soda
    1/4tsp salt
    1/2c. butter
    3/4 c brown sugar
    2 eggs, beaten
    2 1/3c mashed overripe banadas
    1/4c semi sweet chocolate chips

    1. Preheat over to 350F. Lightly grease loaf pan
    2. In a large bowl combine flour, baking soda & salt. In a separate bowl, cream together butter & brown sugar. Stir in eggs and mashed banana (and chocolate chips if you choose). Stir banada mixture into flour mixture, stir just to moisten. Pour batter into loaf pan
    3. Bake 60 min, until toothpick inserted into center comes out clean.

    My kids love banana bread. I alway buy the discounted bananas on the sale rack. They are usally really cheap. The more ripe the better tasting. I can never get the kids to leave the fresh banana alone long enough for them to rippen. It’s quick and easy and it’s better to send to school than some of those bars you buy in the stores

  8. I love anything Chocolate!! I make these awesome brownies in the MICROWAVE.. yes that is right.. and they come out soft and delicious, the kids love helping and love that we dont have to wait 30 min for them to cook! and the Irish Whipped Cream is a little something extra for Mommy ;) I leave the nuts out due to an allergy in the family and replace with more Chocolate chips, its a chocolatey delicious heaven!!! mmmm I am gonna have to go make them right now!!

    2 eggs
    1 cup granulated sugar
    ½ tsp. salt
    1 tsp. vanilla extract
    ½ cup butter, melted
    ¾ cup all-purpose flour, sifted
    ½ cup cocoa powder
    1 cup pecan halves
    ½ cup semi-sweet chocolate chips

    Irish Whipped Cream
    1 cup heavy whipping cream
    2 tbsp. Irish Cream liqueur, such as Baileys® Irish Cream

    Let’s bake!
    1 In a large Bowl mix eggs, sugar, salt and vanilla extract.
    2 melt butter (about 1 minute) and combine with sugar mixture.
    3 Add flour, cocoa, pecans, and chocolate chips and mix with a Spatula until well combined.
    4 Pour batter into TupperWave® Stack Cooker 3-Qt./3 L Casserole and place ¾-Qt./750 mL Casserole/Cover on top. Microwave on high for 5 minutes or until a toothpick inserted into the center comes out clean.
    5 In the Whip ’N Prep™ Chef, mix heavy whipping cream with the Irish Cream liqueur and whip until soft peaks form.
    6 Turn the brownies out onto a serving plate and cut them into even pieces, place on a Plate and top each brownie with whipped cream topping. Sprinkle with cocoa powder to garnish, if desired.

    My favourite recipe is for Granola Cereal

    2 cups of oatmeal
    1/4 cup chocolate chips
    1/2 cup raisins
    1/2 cup sliced or slivered almonds
    1/4 cup flax seed
    1/4 cup sunflower seeds (unsalted)
    1/2 cup coconut
    1 tbsp. cinnamon (optional)

    Mix the above items together in a bowl.

    On the stove melt till it becomes a liquid:
    5 tbsp. of butter
    1/2 cup peanut butter

    Pour butter and peanut butter into dry ingredients and mix.

    Bake at 300 degrees for 30 minutes. Cool and enjoy!

    One of my favourite family recipe’s is my Grandma’s cabbage casserole. It uses tomato sauce, cabbage, ground beef as well as a few other ingredients and tastes fantastic! Her cooking days are now behind her as she is 93 and in a retirement home but this just means we can cook for her! :)

  11. We dont have family recipes (believe it or not). Lately I have been searching and printing things off the net to try. A new fav that is so simple, yet delicious is slow cooked ribs.

    put salt and pepper on ribs and place in over at 350 for 15minutes per side. Then coat well with favorite BBQ sauce. (we like garlic). Then place in slow cooker and squeeze on more sauce so they are super covered. every few hours rub teh sauce around more and add more if needed. (we usually use almost one bottle.) Cook for 6-8 hours.

    Goes well with any of; mashed potatos, salad, rice, broccoli

    What do my kids love the best?
    Chocolate Chip Pancakes.
    The receipe is simple – ok not really one because I cheet.

    I use the pancake mix and add it to a bowl
    I add one egg and the milk.
    Youngest son helps me mix everything together.
    Add the chocolate chips to the mixed batter.

    Then, heat the frying pan with butter and add the mix to the pan. Cook for about a min or so or until they are golden brown!

    Yummy!
